Chicken-Vegetable Soup Recipe

Becky Luigart-Stayner; Jan Gautro

The Chicken Recipes Kitchen (The home of delicious chicken recipes) invites you to try Chicken-Vegetable Soup Recipe. Enjoy quick and easy chicken recipes and learn how to make Chicken-Vegetable Soup.

Americans of Eastern European heritage add a variety of root vegetables, such as turnips and parsnips, to chicken soup for subtle sweetness and bite. Feel free to omit them and simply add more carrot and leek, if you prefer. Be sure to cook the egg noodles separately so the starch in the noodles doesn't cloud the clear soup broth.

Yield: 8 servings

Ingredients

1 (6-pound) roasting chicken
8 cups water
2 1/2 cups chopped celery (about 4 stalks)
2 cups thinly sliced leek (about 2 large)
1 1/2 cups (1/2-inch) cubed parsnip (about 8 ounces)
1 1/2 cups (1/2-inch) cubed carrot (about 8 ounces)
1 1/2 cups (1/2-inch) cubed turnip (about 8 ounces)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 teaspoon chopped fresh dill (optional)
8 ounces egg noodles

Preparation
  1. Remove and discard giblets and neck from chicken. Remove and discard skin from chicken; trim excess fat. Split chicken in half lengthwise; place in a Dutch oven. Cover with 8 cups water; bring to a boil. Cook 10 minutes. Skim fat from surface of broth; discard fat. Add celery and next 4 ingredients (through turnip) to pan, stirring well; bring to a boil. Reduce heat, and simmer 30 minutes or until vegetables are almost tender, stirring occasionally. Remove chicken; let stand 10 minutes. Remove chicken from bones; shred chicken with 2 forks to yield 6 cups meat. Discard bones. Simmer vegetable mixture 10 minutes or until tender. Return shredded chicken to pan. Stir in salt, pepper, and dill, if desired.
  2. Cook noodles according to package directions, omitting salt and fat. Place 1/2 cup noodles in each of 8 bowls; top each serving with 1 1/2 cups chicken mixture.

Andy Water’s Thai chicken soup in a cup recipe

The Chicken Recipes Kitchen (The home of delicious chicken recipes) invites you to try Andy Water’s Thai chicken soup in a cup Recipe. Enjoy our collection of quick & easy recipes and learn how to make Andy Water’s Thai chicken soup in a cup.

Takes: 12 mins to prepare and 18 mins to cook
Serves: 4

Andy Water’s Thai chicken soup in a cup is a simple fun recipe with a colourful twist.

Ingredients

2 skinless chicken breasts, thinly sliced
2tbsp rapeseed oil
1tbsp Thai green curry paste
15g fresh ginger, chopped into small matchsticks
350ml light coconut milk
450ml chicken stock
1tbsp fish sauce
150g egg noodles
100g green beans
1 large carrot, cut into matchsticks
25g fresh coriander, chopped
6 spring onions, thinly sliced
1 red chilli, deseeded and thinly chopped
1 lime, cut into 4 wedges

Heat the rapeseed oil in a pan. Once hot, add the Thai green curry paste. Cook gently for 1 minute, then add the chopped ginger.

Gently pour in the coconut milk, chicken stock and fish sauce. Bring to the boil and then turn down the heat, simmer for a minute.

Add the chicken, bring to the boil and then turn down the heat again and simmer for 10 minutes.

Add the green beans and carrots to the soup and simmer for a further 5 minutes.

Meanwhile, in a separate pan, pour enough boiling water over the dry noodles to cover. Bring to the boil and heat until the noodles are tender and cooked, approximately 2 minutes.

Add the coriander and spring onions to the soup.

Drain the noodles and divide between 4 cups - let the kids choose their favourite cups to serve the soup in, the more colourful the better!

Carefully pour the soup over the noodles. Sprinkle the chopped chilli on top and serve with wedges of lime – go light with the chilli, especially if the kids are doing the sprinkling and make sure everyone washes their hands thoroughly immediately afterwards!

Takes: 20mins to prepare, 70mins to cook and 30mins to cool
Serves: 4

This fun and tasty chicken soup will get the kids involved at all level from helping to mash right through to picking the meat off the bones.

Ingredients

2 chicken legs
1 carrot, peeled topped and tailed
1 onion, peeled
1 leek, white part only
100g (3½oz) butternut squash, peeled
1 bay leaf
1 sprig fresh thyme
1tsp salt
2 garlic cloves, unpeeled
1l (1¾ pints) chicken stock, or water to cover
8tbsp pasta animals

Place all of the ingredients, except the pasta, into a pan. Cover with cold water and bring to the boil.

As the water boils, skim off the foam and any impurities such as oil or fat with a large spoon. Reduce the heat, cover, and leave to simmer for approximately 1 hour.

Once the chicken is cooked through and is falling off the bone, remove the pan from the heat. Remove the chicken legs using a slotted spoon and place in a tray to cool.

Strain the remaining liquid through a sieve into a clean pan. Set the vegetables aside.

Place the pan over a low heat and bring to a simmer, the stir in the pasta animals and cook for 5-8 minutes until soft. Turn off the heat.

Meanwhile, mash the vegetables, making sure to pop the garlic cloves out of their skin.

The chicken legs should have cooled by now – get the kids to pick the chicken meat off the bones and roughly chop.

Return the mashed vegetables and chicken to the pan. Heat through and add a pinch of salt and pepper if needed.

Divide the chicken soup across 4 bowls and serve immediately.

Try

Feta & spinach scones
Heat oven to 180C/fan 160C/gas 4. Put 280g self-raising flour and a large pinch of salt into a large bowl and make a well in the centre. In a separate bowl, combine 100g cubed feta, 3 tbsp sunflower oil, 2 eggs, 280ml Greek yogurt and a small handful baby spinach leaves, roughly chopped. Stir into the flour to form a soft dough, tip onto a floured surface and shape into a thick, flattish round. Brush with milk. Bake for 40-45 mins. Cool, then serve in wedges.

IF YOU WANT TO USE A SLOW COOKER
Gently fry your onions, carrots and thyme for 15 mins then tip it with the veg into your slow cooker with 1 litre stock. If you're using a chicken carcass, add it now. Cover and cook for 2-3 hours on High until the veg is tender. If you used a carcass remove it now, shredding remaining chicken from bones. Stir back into the soup, or add leftover chicken now, plus peas. Cook for 30 mins more. Remove half the mixture then puree with a stick blender to your liking.

Chicken broth

2 stalks flat-leaf parsley
2 sprigs thyme
1 tbsp whole black peppercorns

Bone marrow dumplings

200 gm beef bone marrow, finely chopped
50 gm fresh breadcrumbs
2 tbsp finely chopped flat-leaf parsley
1 tbsp finely chopped rosemary leaves
¼ cup finely chopped chives
40 gm plain flour
3 eggs, lightly whisked

Preparation

Preheat oven to 220C. Place chicken bones and wings in a large roasting pan and roast for 30 minutes or until dark brown in colour. Chicken and ginger broth recipe

The Chicken Recipes Kitchen (The home of delicious chicken recipes) invites you to try Chicken and ginger broth Recipe. Enjoy our collection of quick & easy recipes and learn how to make Chicken and ginger broth.

Ginger is said to aid the natural healing of one's body. Combined with chicken soup, this recipe has the potential to make you feel healthier and it tastes great too.

Preparation Time 10 minutes
Cooking Time 18 minutes

Ingredients (serves 4)

3 (about 160g) fresh lasagne sheets (Latina brand)
1L (4 cups) water
2 410g cans chicken consomme (Campbell's brand)
2 (about 360g) single chicken breast fillets, halved lengthways
100g fresh ginger, peeled, thinly sliced
1 125g tray baby corn
1 tbs finely shredded fresh ginger
Freshly ground black pepper
2 green shallots, trimmed, diagonally thinly sliced, to serve

Method

Use a sharp knife to roughly cut the lasagne sheets into uneven pieces.

Combine the water and chicken consomme in a large saucepan, and bring to the boil over high heat. Reduce heat to medium. Add the chicken and sliced ginger, and simmer, uncovered, for 12 minutes or until the chicken is just cooked through. Use a slotted spoon to transfer the chicken to a plate and set aside to cool for 5 minutes. When cool enough to handle, use your fingers to shred the chicken into small pieces.

Strain the broth through a fine sieve into a clean saucepan. Discard the ginger. Bring the broth to the boil over high heat. Add the chicken, lasagne sheet pieces and baby corn. Reduce heat to low and simmer, uncovered, for 3 minutes or until corn is just tender. Stir through the shredded ginger. Taste and season with pepper.

Ladle the broth into serving bowls and sprinkle with the green shallots.
